Mini Cranberry Banana Bread

Wishing you a very Merry Christmas! We are focusing once again on one of my favorites, the amazingly healthy tart cranberry. These little powerhouses are low in calories, high in fiber, high in Vitamin C, loaded with cancer fighting antioxidants, and full of powerful phytochemical that protect your body from illness. Wow! Now, in my humble opinion, Thanksgiving isn’t complete without cranberry sauce (posted that one in November) and a December breakfast is just crying and pouting for some cranberry banana bread. So into the kitchen I flew to whip up a recipe. Cranberry banana bread might sound like its going to get you on Santa’s “naughty” list. Well, put down that coal, you jolly old elf, because this healthy recipe has no sugars, no sweeteners, no flours, no eggs, no dairy, no gluten, and no animal products. Indulge in this delicious healthy mini loaf and remain secure on the “nice” list. “Merry Christmas to all, and to all a good night!”
