Chai Spice Pear Morning Cake

Let them eat CAKE! With no sugar or flour, of course! This is a heavenly Bright Line Eating compliant woman’s weight loss breakfast. If the idea of baked goods makes your head get squirrelly, this isn’t the time in your program to try this recipe. My brain looks at it as baked oatmeal, instead of stovetop oatmeal. It took me many tries to perfect this pursuit of a richly flavorful chai spice breakfast. At first, I tried it with berries but they overpowered the chai flavor, instead I selected the subtle sweetness of pear. Yum! When I increased the spice amounts, the texture got a bit gritty so that was a dance. Almond butter allows the chai spice to shine, while peanut butter is too strong. And the sliced almonds, add the perfect little bit of crunch. I baked it in several different containers, including a ramekin and a mini loaf pan-the only one that will guarantee that you can plate it whole is a mini springform pan. If you like chai spice latte or tea, you will spring awake when this is on your breakfast menu. It’s going to be a Good Morning!
