Looking for a healthy substitute for mashed potatoes? Caulitatoes (cauliflower made like mashed potatoes) are the answer. Seriously, this recipe has become a weekly staple in my home. The caveat is you must start with fresh cauliflower so it gets the right consistency. Follow these easy directions for the magic, then serve them in recipes and meals where you’d usually have mashed potatoes.
